more than 4,000,000 ducks and 130,000 geese produced per year, Gers is one
of the main foie gras producers.
In this department, co-operatives, commodity groups, farming enterprises
and farmers coexist harmoniously and all of them want to offer consumers
quality products, relying on a savoir-faire, a soil and a product chain

Gers department
numbers more than 1800 independent producers, attached to their full freedom
of action and faithful to ancestral practices.
More than 1500 producers directly sell to consumers, fresh foie gras and
carcasses, ready to cook, on their farm or on street markets. Poultry is
reared, crammed and slaughtered traditionally, on the farm, while meeting
sanitary regulations (EEC agreed or identified slaughter rooms).
Moreover, Gers counts nearly 250 farmers-canners among whom one hundred
members of the farm producers association : Producteurs à la Ferme
- Foie Gras du Gers; they also achieve the processing of farm-produced
foie gras

For those
who are very fond of farm products, Gers
farm producers of Gers Foie Gras offer whole foie gras, confits,
cassoulets, magrets, pâtés and rillettes.
The hundred adhering to the Association have a common will: to reveal their
savoir-faire, ensure the consumer that fabrication is authentic and healthy
and finally, welcome him in a friendly manner. A Consumer Quality Charter
has been established, so that each producer meets his commitments.
Street markets
:
The "marché au gras" is the oldest manner to market foie
gras palimeds. Within one hour from Toulouse, and directly with producers,
combining tradition with modernism, the Gers "halles au gras"
propose every morning of the week, fresh products: Foie gras and carcasses
of ducks and geese.

Gers
is a traditional basin for fattened geese production. Its patrimony is unique:
In 1998,
the institution of the Red Label by the Association for Gers Farm Goose
Defence (Association de Défense de l'Oie Fermière du Gers)
allows to maintain the traditional production of geese in Gers and also
to meet the requirements of Comtesse
du Barry, which wants high-quality products for its foie gras and
geese meat supplies.
The consumer is ensured that he will taste authentic soil products thanks
to rigorous specifications, identification and traceability of products
and a full control of the product chain.
Red Label Gers farm duck :

In 1989, in order to cope with the commonalisation of products derived from
duck, a book of specifications « Canard Fermier du Gers Label Rouge
» was presented by Avigers, ensuring high quality of foie gras, magret
and cut products (aiguillettes, gésiers, manchons
).
Ducks are fed with plant food, they have access to large grassy areas. They
are crammed, when fully grown, in a traditional way with entire grains of
corn.
Today, consumers are ensured to taste traditional and quality products,
thanks to rigorous specifications, identification and traceability of products,
and a full control of the product chain.
Today, in Gers, GATTI S.A. sells products derived from ducks with a GERS Red Label certification.

In Figuigers, there is « fi » for figs, « gui »
for guit (which is the gascon name of duck) and Gers. The whole indicates
a duck reared in the open air, in Gers, crammed with figs and corn
and stuffed with its foie gras.
This duck only - can pretend to the « Figuigers » designation.
